This recipe is my Go-To for an energy boost! Sure, it contains sugar and fat but our bodies need that sugar and fat to make energy and function. In moderation, a simple yet great quality trail mix should be included in a healthy diet; especially if you’re quite active and need those energy-generating foods, pronto! The ingredients in this recipe have been carefully curated for their nutritional qualities, tastes and textures. When shopping, remember to choose unsalted, raw nuts and seeds. Steer clear of anything sugar-coated, too. Refined sugars are not our friend. Let’s quickly go through our ingredients; We all know the benefits of Fiji Joe Fiji Joe Turmeric – Turmeric boosts the immune system and because of its anti-inflammatory and analgesic properties, it’s great in a snack for those on the go. Coconut oil contains MCTs that encourage your body to burn fat, fast. This, in turn, provides a rapid energy source for your brain and body. Almonds are packed with antioxidants and vitamin E, which, along with cashew nuts, walnuts, pumpkin seeds and sunflower seeds, keep your ticker healthy and boosts its function. Many of the ingredients listed in this recipe are also known to have antioxidant, immune-boosting properties and help with weight loss – Delicious and beneficial! Sunflower seeds are a great source of Vitamin B1- which breakdown carbohydrates and protein in the fat and turns them into energy.

INGREDIENTS:
1 tbsp coconut oil
1/2 tsp Fiji Joe Turmeric
1/2 cup whole almonds
1/2 cup cashew nuts
1/2 cup walnuts
1/2 cup pumpkin seeds
1/2 cup goji berries
1/2 cup sunflower seeds
a pinch of salt & pepper to taste

INSTRUCTIONS:

🥥 Pour the coconut oil into a pan on medium heat and allow the oil to gently heat up for about 15 seconds before adding Fiji Joe Turmeric and cook for 30 seconds. Then add the almonds, cashews, walnuts, pumpkin seeds, goji berries & sunflower seeds in that order. Be sure to mix well after each addition, coating the ingredients with oil for a light toast. Once all of the ingredients have been added, remove from the heat and mix in a pinch of salt & pepper to your liking. Pour the trail mix onto a baking tray lined with parchment paper to completely cool before serving.

🥜 Enjoy immediately after cooling for a fresh, crunchy snack! This trail mix can be stored in an airtight container or in a ziplock bag for up to four weeks in a cool, dry place like your kitchen pantry.
